With these spring-time temperatures, I’m ready to enjoy dinners outside on our patio. Living in the Southern Georgia, we usually only have a few weeks when the weather is just perfect; light breezes and 70 degree temps! I just renovated our patio last year so I’m definitely taking advantage of outdoor dining this spring! P.S. The outdoor dining table and chairs are back in stock! Today, I’m sharing one of my favorite fresh salad recipes that’s perfect for alfresco dining!
Avocado and Caprese Salad Recipe
- Fresh Mozzarella
- Olive Oil
- Cherry Tomatoes
- Pesto (Optional: Mix with 2 tablespoons of olive oil)
Rinse Arugula and pat dry. Add to bowl. Add sliced cherry tomatoes, fresh mozzarella and avocado. Pour 2 tablespoons or desired amount of olive oil. Season with salt and pepper. Serve immediately.
